Best Cocktails for Hot Days

The warmer and longer days of summer call for fruity tropical cocktails, poolside sippers, and recipes that take advantage of seasonal produce like peaches, citrus, and even watermelon. Here are some cocktails you’ll want to sip throughout the rest of summer.

Cheeky Peach

To create this fruity summer sipper, all you need is vodka, peach schnapps, pineapple juice, and a little mint so you can always party like it’s the middle of August.

  • ½ ounce peach schnapps

  • 1 ounce pineapple juice

  • ½ ounce simple syrup

  • 2 dashes bitters

  • 5 mint leaves

  • Club soda, chilled, to top

  • Garnish: mint sprig

Directions

  1. Add the vodka, peach schnapps, pineapple juice, simple syrup, bitters and mint leaves to a shaker with cubed ice; shake until well-chilled.

  2. Double-strain into a double rocks glass over crushed ice; top with the club soda.

  3. Garnish with a mint sprig.

Summer Tonic

Tonic is most associated with gin and vodka, but try adding a twist of fun with rum this summer. This gin & tonic-inspired cooling cocktail is a delicious mix of rum, bitter amaro, lemon juice, and tonic water, full of exquisite botanical flavors.

Ingredients

  • 1-½ ounces Mount Gay rum

  • 1 ounce bitter amaro

  • ½ ounce lemon juice, freshly squeezed

  • 4 ounces Fever-Tree aromatic tonic water, chilled, to top

  • Garnish: rosemary sprig

Directions

  1. Fill a large snifter with ice; add the rum, amaro, and lemon juice.

  2. Top with the tonic water; stir briefly and gently to combine.

  3. Garnish with a rosemary sprig.

  • Ginger ale or ginger beer, to top

  • Garnish: lemon or lime wedge
